Gazpacho con camarones al castillano
INGREDIENTS
- 2-2/3 cups tomato and clam juice cocktail
- 1 pound cooked shrimp, peeled and cleaned
- 1-1/3 avocados, peeled and chopped
- 2/3 cucumbers, cubed
- 1 large tomato, diced
- 1/3 red onion, diced
- 1/3 bunch cilantro, chopped
- 2 teaspoons lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 celery stick (optional) for decoration
DIRECTIONS
1. In a large bowl, combine the tomato and clam juice cocktail, shrimp, avocados, cucumbers, tomatoes, red onion, cilantro, lemon juice, salt, and pepper.
2. Refrigerate until ready to serve.

Sándwich a la argentina
INGREDIENTS
- 1 loaf of rustic Italian bread
- 6 thinly cut chicken breasts
- 2 cups of Italian bread crumbs
- Romaine lettuce
- 2 Roma tomatoes, sliced
- Mayonnaise
- Olive oil
- Fresh oregano and rosemary
DIRECTIONS
1. In a plate, cover chicken breasts with bread crumbs and add salt to taste. Heat olive oil in a large skillet; add oregano and rosemary, then add chicken. Sauté chicken until cooked through, about 10-15 minutes.
2. Heat bread loaf in the oven until warm and toasted. Cut the loaf of bread from left to right to create an opening. Add mayonnaise, chicken breasts, lettuce and tomatoes.
